Pineapple Shrimp Kabobs
Fire up the grill for this sweet and salty marinade featuring wild caught Open Nature® shrimp. This fresh and vibrant meal is perfect for spring and the whole family will love it. Serve with coconut rice for an easy weeknight dinner.

Marinade
- 1 cup diced fresh pineapple
- 1/4 cup loose O Organics® fresh mint
- 2 cloves garlic
- 2 teaspoon cajun seasoning plus more to taste
- 1/4 cup Rice Vinegar
- 3 tablespoon lime juice
- 3 tablespoon O Organics® Soy Sauce
Skewers
- 2 pounds Open Nature® shrimp
- 1 red bell pepper cut into 1 square inch slices
- 1 orange bell pepper cut into 1 square inch slices
- 1 red onion cut into 1 square inch slices
- 2 cups pineapple chunks
- salt and pepper to taste
Cooking Instructions
Step 1
Make your marinade by combining all marinade ingredients into a food processor or blender. Pulse until smooth. Divide the marinade in half, reserving some for serving. Set aside.
Step 2
Prepare your skewers by threading the shrimp and veggies in any order you like. You can also do skewers with all shrimp, and some with all veggies.
Step 3
Place the skewers in a large container or bag, and pour 1/2 of the the marinade on the prepared skewers.
Step 4
Marinade for as little as 15 minutes, or as long as 1 hour.
Step 5
Prepare your grill. Heat to a medium high heat, or 450 degrees.
Step 6
Once heated, place skewers on the grill and cook for 3-4 minutes per side. Remove from heat.
Step 7
. Let cool for a few minutes before serving. Pour the reserved marinade over the shrimp and serve. Salt and pepper to taste
