Summer Thai Style Salad with Shredded Vegetables
Enjoy this hearty, veggie-packed salad with a daring combination of flavors and textures including a tangy and crunchy Thai peanut dressing made with Open Nature® Sesame Ginger Dressing!

- 2 cups Green Zucchini
- 1 cup Yellow Squash
- 1/4 cup Green Onion
- 1/4 cup Cilantro or Thai Basil
- 1/2 cup Crunchy Salted Peanut Butter
- 1/2 cup Open Nature® Sesame Ginger Dressing
- 2 tablespoons Fresh Lime Juice
- 1 pinch Salt and Pepper
- 2 pinches Chile Pepper Spice (optional)
Prepare zucchini and squash by cutting into thin sticks.
Thinly slice green onion and hand tear herbs.
Prepare dressing by mixing together the peanut butter and Open Nature® Sesame Ginger Dressing.
Dress vegetables with peanut-sesame ginger dressing.
Add fresh lime juice and mix well.
Transfer to serving bowl and enjoy!
