Vegan Pancakes: You'll Need: (To make a small batch (6 pancakes) of vegan pancakes, use 1 cup mix, 2 tablespoons oil, and 3/4 cup cool water. Prepare as directed). 1 box Essential Goodness plant protein pan cake mix. 4 Tablespoons oil. 1-1/2 cup cool water. Preheat: lightly greased griddle or skillet to medium, about 350 degrees F. Combine: Mix, oil, and water, stirring until nearly smooth. Allow the batter to rest for 5 minutes, to thicken. Pour: Batter 1/4 cup at a time on griddle. Cook until bottoms are golden brown, flip and cook until the second side is browned. Makes 12 vegan pancakes.
