Directions Muffins: You Will Need: For Muffins: 1/2 cup milk; 2 eggs; 1/4 cup vegetable oil. For Streusel Topping: 1 tbsp softened butter. Preheat oven to 400 degrees F. Line muffin pan with paper baking cups, or grease bottoms lightly with cooking spray or shortening. In a small bowl, combine streusel topping with 1 tablespoon butter until incorporated and crumbly. Reserve 1/4 cup streusel mix and set aside. Stir mix, oil, eggs, and milk in a medium bowl until well blended. Gently fold 1/4 cup reserved streusel mix into batter. Spoon batter evenly into muffin pan and sprinkle remaining streusel on each muffin. Bake 20-24 minutes or until toothpick inserted in center comes out clean. Cool completely before storing. Coffee Cake: You Will Need: For Coffee Cake: 1/2 cup milk; 2 eggs; 1/4 cup vegetable oil. For Streusel Topping: 1 tbsp softened butter. Preheat oven to 400 degrees F. Grease bottom of 8x8 inch pan with cooking spray or shortening. In a small bowl, combine streusel topping with 1 tablespoon butter until incorporated and crumbly. Reserve 1/2 of streusel topping and set aside. Stir mix, oil, eggs and milk in medium bowl until well blended. Spoon half of batter into prepared pan. Sprinkle half of the streusel onto batter. Add remaining batter into prepared pan and spread to the edges of pan, then top with remaining streusel. Bake 28 to 32 minutes or until toothpick inserted in center comes out clean. Cool completely before slicing and storing. Keep in a cool dry place.
