Season lamb roast with herbs and seasonings, as desired. Do not add water. Do not cover. 3. Roast to desired doneness. For medium rare cook to 145 degrees F, for medium cook to 160 degrees F, for well-done cook to 170 degrees F. 4. Remove from oven; tent with foil and let rest 10 minutes before carving.
