Sweet Curry Vegetable Medley. Make this recipe with Pero Organic Vegetable Medley. 10 Oz Pero Family Farms' Vegetable Medley 1/2 Cup Coconut Milk 1 Tbsp, Peanuts, Crushed (Option,) 1 Tbsp, Lime Juice 1 Tbsp, Brown Sugar 1 Tbsp, Cilantro, Chopped 1/2 Tbsp, Curry Powder 1/4 Tbsp, Cayenne Pepper Salt and Pepper. How to Make it: Cook the Vegetable Medley to desired texture using microwave directions. Transfer the vegetables to Saute pan on medium heat. Next, add the coconut milk, curry powder, brown sugar, lime juice, cilantro and cayenne pepper. Mix thoroughly. Cook for 2 more minutes or until sauce is hot and coating vegetables. Add salt and pepper, to taste. Top with crushed peanuts and enjoy! Microwave: Microwave Directions: Pierce this bag with a fork. Place bag on a microwave-safe dish. Microwave on high for 3 to 5 minutes. Remove dish from the microwave. Let stand for 1 to 3 minutes. Open bag carefully it will be hot and the package will steam. Serve immediately and enjoy!
