Directions Cooking: Makes 4 servings, about 3/4 cup each. Cover 1 cup Wel-Pac Mung Beans with cold water; let stand 8 hours or overnight. Drain well. Combine beans, 3 cups water and 1/4 teaspoon salt (optional) in medium saucepan. Bring to a boil over high heat. Reduce heat to low. Cover and simmer 15 to 20 minutes, or until beans are tender. Remove from heat. Drain. Serve plain, as a side dish, or add to soups, salads and stews, as desired.
