Directions Beef roast 3 to 4 lb, oven roast at 325 F medium rare: 1-3/4 to 2 hours. Medium: 2-1/4 to 2-1/2 hours. For large roast add 1/2 to 1 hour. Heat oven to 325 F. Place roast (from refrigerator), fat side up, on rack in shallow roast pan. Season with salt and pepper. Insert ovenproof meat thermometer so tip is centered in thickest part of roast. Time roast per above. Remove when temperature reads 135-140 F for medium rare, 145-150 F for medium.
