You Will Need: 2 eggs; 2 tbsp oil; water or milk (any kind). Directions for one batch of waffles. 1. Combine 2 eggs. 2 tablespoons oil, 3/4 cup water or milk (any kind). Add to 2 cups of dry mix. Blend well. Add more liquid, if needed. 2. Preheat waffle iron to medium (350 degrees F) heat. Spray preheated waffle iron iron with non-stick cooking spray. Pour batter onto waffle iron bottom. Cook until golden brown. Serve hot. Yield: 5-6 waffles. Directions for one batch of pancakes. 1. Follow directions above decreasing water to 1/2 cup. (If you like your pancakes thinner, you can add more liquid). Batter will thicken as it stands. 2. Pour onto preheated sprayed pan or griddle. Cook until bubbly on top edges and golden on bottom. Flip and cook until golden on bottom. Yield: 6-8 pancakes. Add favorite toppings and enjoy! Notes waffles and pancakes can be frozen and reheated in toaster or toaster oven. Adding spices and fruit such as cinnamon and berries makes a tasty addition!
